Kalguksu

Kalguksu (literally "knife noodles") is a Korean noodle dish consisting of handmade, knife-cut wheat flour noodles served in a large bowl with broth and other ingredients. It is traditionally considered a seasonal food, consumed most often in summer. Its name comes from the fact that the noodles are not extruded or spun, but cut.The noodles are made with dough from wheat flour and eggs, and sometimes ground bean powder is added for texture. The dough is let to breathe, then rolled out thinly and cut in long strips. The broth for kalguksu is usually made with dried anchovies, shellfish, and kelp. Sometimes chicken broth would be used. In order to obtain a rich flavor, the ingredients are simmered for many hours. The noodles and various vegetables, most often zucchini, potatoes, and scallions are added and boiled together. Usually seasoned with salt, the noodles are served with garnish of choice

Varieties

  • Jemul kalguksu (제물칼국수): Noodles are put to a boil with other ingredients in broth, instead of being added later. Both the noodles and broth gain a thick texture.
  • Ssook (Mugwort) kalguksu (쑥칼국수): Mugwort is added to the dough when making the noodles. Usually served in anchovy broth.
  • Mung bean kalguksu (녹두칼국수): Boiled mung beans are crushed, sieved, and added to the noodle dough.
  • [Hobak [Pumpkin]] kalguksu (호박칼국수): Noodles are cooked with a porridge-like mixture of red beans and rice, and served in a hollowed-out pumpkin. A specialty dish ofChungcheongnam-do.
  • Perilla seed kalguksu (들깨칼국수): Finely ground perilla seeds are added to the broth. Seasoned with soy sauce and garnished with zucchini and shiitake mushrooms.
  • Pheasant and buckwheat kalguksu (꿩메밀 칼국수): Broth is made from pheasant, and noodles from buckwheat flour.
  • Pea kalguksu (완두콩칼국수): Peas are boiled and sieved and added to the broth. Seasoned with minced garlic.[9]
  • Small octopus kalguksu (밀국낙지칼국수): A small octopus is cooked inside a squash, and later cut to add to the noodles and broth.
  • [Song-e bosut[Pine mushroom]] kalguksu (송이버섯칼국수): Pine mushrooms are sliced and added with other vegetables while boiling. A specialty from the Gangneung region.
  • Snail kalguksu (고둥칼국수): Freshwater snails are boiled and ground into a broth, and noodles are added.
  • Millet kalguksu (조밥칼국수): A specialty dish from the Andong region, noodles are served with rice made of millet, and ssam. The noodles are made from a mixture of bean powder and flour. The meal is served with a seasoning sauce made from soy sauce, minced garlic, scallions, red chili powder, sesame oil, and sesame salt.
  • Andong kalguksu (안동칼국수): Specialty of the Andong region. Ground bean powder is added to the flour when making noodles. The broth is usually made from chicken

  • Gogi kalguksu (고기칼국수), a variety made with beef broth and bibim guksu
  • Haemul kalguksu (해물칼국수), a variety of kalguksumade with seafood.

Crossing the bridge noodles

Crossing the bridge noodles is a kind of rice noodle soup from Yunnan province, China. It is one of the most common dishes in Yunnan cuisine.The bridge-crossing noodle's origins are uncertain. One likely theory is that it originates from a bridge in southern Yunnan in Mengzi County, where there is a rice vermicelli tradition at least 100 years old.Another explication is in the following story; A scholar was studying hard for his imperial exams. A large earthen pot was loaded individually with pig bone or chicken soup. Noodles and other ingredients were kept in another container. When his wife combined them just before eating, they became a nutritious bowl of steaming noodles. This was thought to have two advantages: a thin film would form on the surface of the soup, keeping it warm, and eating became more efficient because the noodles and soup were together. This allowed the student to study harder.The main ingredient of the noodles is rice. Rice vermicelli production is quite different in many regions. In particular, in Kunming, Yunnan, there are two varieties such as "dry paste" or "sour paste". The production process differs depending on individual preferences and tastes. The distinction is quite simple, "sour paste", as the name suggests, tastes a little sour, but obviously it is characterized by a relatively thick and soft rice noodle. The "dry paste" does not have the sourness of the sour paste, and the noodle is relatively thin and more rigid. The older people in Kunming think the "sour paste" noodles is more authentic. Most people in Yunnan think the Kunming noodle does not satisfy their taste buds, and generally believesMengzi County and Jianshui County makes better noodles.Now, as people's tastes change, all kinds of noodle varieties are flooding onto the market. Kunming people now do not necessarily pick a "dry paste" or "sour paste." Ban mian

Bǎn mian is a Hokkien-style egg noodle soup common in parts of China's Fujian province, and also in other parts of the world such asSingapore and Malaysia, although the dish itself may vary significantly. Some forms of ban mian, for instance, comprise hand-kneaded pieces of dough, while others use regular strips of noodles.Ban mian (literally "board noodles") is so named due to the characteristic flat shape of its noodles.

China

Ban mian served in parts of China, such as in northern Fujian, comprises egg noodles which are boiled, and served in sesame butter sauce, and in soup.

Malaysia and Singapore

In Malaysia and Singapore, health-conscious individuals are taking to ban mian (or pan mee), due to its relatively generous serving of vegetables and less use of seasoning and other artificial ingredients. Also known as handmade ban mian (手工板面), it is, however, made using a hand-operated machine in the stall which forms noodles from the dough. The dish is served in soup, usually with pieces of minced chicken or minced pork, ikan bilis (anchovies), vegetables, and an egg, and also commonly comes with sliced mushrooms and fish balls.In Singapore, the handmade ban mian stalls often offer alternative toppings. Albert Pujols

Jose Alberto Pujols Alcantara (born January 16, 1980), better known as Albert Pujols (Spanish pronunciation: [ˈalβert puˈxols]), is a Dominican-American professional baseball player, who is currently a free agent. A first baseman, Pujols is considered one of the top players in Major League Baseball, and was the most feared hitter in baseball in 2008, according to a poll of all 30 MLB managers.He won the National League Rookie of the Year award in 2001, and has since been selected as an All-Star nine times, and won the National League Most Valuable Player Award three times. He has also twice won the National League Hank Aaron Award, and has two World Series rings from the Cardinals' 2006 and 2011 titles.At the end of the 2011 season, he led all active players in batting average (.328), slugging percentage (.617), and OPS (1.037), and ranked 37th in number of home runs in Major League Baseball history. He was selected by ESPN.com as the greatest player of the decade from 2000–09. He stands 6 ft 3 in (1.91 m) tall, weighs 230 pounds (100 kg), and bats and throws right-handed.Pujols and the Cardinals set a deadline for the start of spring training for contract extension negotiations. Pujols was 5-for-6 with two singles, four runs scored, and six RBIs.[78] Pujols became the first player in World Series history to get hits in four consecutive innings: fourth (a single), fifth (a single), sixth (a home run and three RBIs), and seventh (home run and two RBIs). He tied records for most home runs (three), most hits (five), and most RBIs (six) in a World Series game, and established a new record with 14 total bases.Game 3 was his 70th post-season game. Taylor Daniel Lautner

Taylor Daniel Lautner (pronounced /ˈlaʊtnər/, lowt-ner; born February 11, 1992) is an American actor, voice actor, model, and martial artist. As a child, Lautner took up martial arts and was ranked number one in his category by the American Sports Karate Association. Lautner soon thereafter began his acting career, appearing in bit roles in comedy series such as The Bernie Mac Show (2003) and My Wife and Kids (2004), before having voice roles in television series like What's New, Scooby-Doo? (2005) and Danny Phantom (2005). In 2005, he appeared in the film Cheaper by the Dozen 2 and starred in The Adventures of Sharkboy and Lavagirl in 3-D.Lautner got his big break when he was cast as Jacob Black in The Twilight Saga film series, beginning with the first film, Twilight (2008). Lautner returned for the following two movies, The Twilight Saga: New Moon (2009) and The Twilight Saga: Eclipse (2010), and is set to appear in the last two films for the series, The Twilight Saga: Breaking Dawn. Lautner has been nominated for several awards for his work in the Twilight series, including honors at the MTV Movie Awards, People's Choice Awards, and Scream Awards. In 2007, filmmakers began a search for actors to portray Jacob Black, a Native American friend of lead character Bella Swan in Twilight, the first film in the The Twilight Saga film series.
 In January 2008, an open casting call was held in Portland, Oregon. Lautner had not heard of the Twilight series before, but was urged by his agent to audition. At his audition, he read lines with Kristen Stewart, who had already been cast as Bella, and they acted out scenes from The Twilight Saga: New Moon and The Twilight Saga: Eclipse.  The film was a commercial success, earning $69 million its opening weekend, and has grossed $392 million worldwide. It received mixed reviews from critics, having a "Rotten" rating with aweighted average of 5.5/10. In describing the critical consensus, it stated: "Having lost much of its bite transitioning to the big screen, Twilight will please its devoted fans, but do little for the uninitiated."  On Metacritic, which assigns a weighted mean rating out of 100 reviews from film critics, it has an average score of 56 from the 37 reviews.  At the 2009 MTV Movie Awards, Lautner was nominated for Male Breakthrough Performance, which was won by co-star Robert Pattinson.
Lautner returned for the third Twilight film, The Twilight Saga: Eclipse, in 2010.
