Krumkake

Krumkake or 'Krum kaka' (English pronunciation: /ˈkruːmkɑːkə/, meaning bent or curved cake, plural krumkaker) is a Norwegian waffle cook!e made of flour, butter, eggs, sugar, and cream. Krumkake are traditionally made during the Christmas season.

A special decorative two-sided iron griddle, similar to a waffle iron, is used to bake the thin round cakes. Older irons are used over the stove, but modern electric irons offer the convenience of nonstick surfaces, automatic timing, and multiple cakes per batch. While hot, the 13–20 cm krumkake are rolled into small cones around a wooden or plastic cone form. Krumkake can be eaten plain or filled with whipped cream (often multekrem) or other fillings.These cook!es are popular not only in Norway but also among Norwegian immigrant descendants in the American Midwest. Krumkaker are traditionally made in preparation for Christmas, along with other Norwegian sweets including Sandbakelse and Rosettes. They offer a sweet dessert after the traditional Christmas Eve dinner of ribs or pinnekjøtt. In Germany, the cook!es are commonly filled with sweet stuffings. They are also used as a type of ice cream cone.

Smørrebrød

Smørrebrød (originally smør og brød; Danish for "butter and bread") usually consists of a piece of buttered rye bread (rugbrød), a dense, dark brown bread. Palæg (literally "on-lay"), the topping, then among others can refer to commercial or homemade cold cuts, pieces of meat or fish, cheese or spreads. This daily practice is the base on which the art of the famous Danish open sandwich, smørrebrød is created: A slice or two of palæg is placed on the buttered bread, and then pyntet (decorated) with the right accompaniments, to create a tasty and visually appealing food item.

Traditional toppings include marinerede sild, which are pickled herrings (plain, kryddet – spiced, or karry – curried), slightly sweeter than Dutch or German herrings; thinly-sliced cheese in many varieties; sliced cucumber, tomato and boiled eggs; leverpostej, which is pork liver-paste; dozens of types of cured or processed meat in thin slices, or smoked fish such as salmon; mackerel in tomato sauce; pickled cucumber; boiled egg, and rings of red onion. Mayonnaise mixed with peas, sliced boiled asparagus and diced carrot, called italiensk salat (lit. Italian salad), remoulade or other thick sauces often top the layered open sandwich, which is usually eaten with utensils. It is custom to pass the dish of sliced breads around the table, and then to pass around each dish of toppings, and people help themselves.Hundreds of combinations and varieties of smørrebrød are available, and some traditional examples include:
  • Dyrlægens natmad (Danish: Veterinarian's midnight snack) — On a piece of dark rye bread, a layer of liver pate (leverpostej), topped with a slice of corned beef (salt kød) and a slice of meat aspic (sky). This is all decorated with raw onion rings and garden cress.
  • Eel — Smoked eel on dark rye bread, topped with scrambled eggs and sliced radishes or chopped chives.
  • Leverpostej — Warm rough-chopped liverpaste served on dark rye bread, topped with bacon, and sauteed mushrooms.
  • Roast beef — thin sliced and served on dark rye bread, topped with a portion of remoulade, and decorated with a sprinkling of shredded horseradish and toasted (ristet) onion.
  • Roast pork (Ribbensteg) — thin sliced and served on dark rye bread, topped with red sweet and sour cabbage, and decorated with a slice of orange.
  • Spiced meat roll (Rullepølse).
  • Tartarmad — raw beef mince with salt and pepper, served on dark rye bread, topped with raw onion rings, grated horseradish and a raw egg yolk.
  • Smoked salmon (laks) — Slices of cold smoked or cured salmon (gravad laks) on white bread, topped with shrimp and decorated with a slice of lemon and fresh dill.
  • Stjerneskud (Danish: Shooting Star) — On a base of buttered white bread, two pieces of fish: a piece of steamed white fish on one half, a piece of fried, battered plaice (rødspætte) on the other half. On top is piled a mound of shrimp, which is then decorated with a dollop of mayonnaise, red caviar, and a lemon slice.

Lutefisk

Lutefisk (Norwegian) or Lutfisk (Swedish) (pronounced [lʉːtəfɪsk] in Southern Norway, [lʉːtfesk] in Central and Northern Norway, [lʉːtfɪsk] in Sweden and the Swedish-speaking areas in Finland (Finnish: lipeakala)) is a traditional dish of the Nordic countries and parts of the Midwest United States. It is made from aged stockfish (air-dried whitefish) or dried/salted whitefish (klippfisk) and lye (lut). It is gelatinous in texture, and has an extremely strong, pungent odor. Its name literally means "lye fish."

Dried and salted cod, Stockfish

, often called salt cod or clipfish (klippfisk in Norwegian, see also other names), is cod which has been preserved by drying after salting. Cod which has been dried without the addition of salt is called stockfish.With the sharp decline in the world stocks of cod due to overfishing, other white fish are often used instead. Sometimes these other species are labeled as such, and sometimes still misleadingly called "salt cod", so the term has become to some extent a generic name.
Dried and salted cod has been produced in Canada, Iceland, Faroe Islands, Norway and Portugal for over 500 years. It forms a traditional ingredient of the cuisine of many countries around the Atlantic. Traditionally it was dried outdoors by the wind and sun, but today it is usually dried indoors with the aid of electric heaters.The fish is beheaded and eviscerated, often on board the boat or ship. (This is feasible with whitefish, whereas it would not be with oily fish.) It is then salted and dried ashore. Traditionally the fish was sun-dried on rocks or wooden frames, but today it is mainly dried indoors by electrical heating. It is sold whole or in portions, with or without bones.

Traditionally salt cod was made exclusively of cod. After the collapse of the Grand Banks (and other) cod stocks due to overfishing, some products sold as salt cod are in fact other whitefish, such as pollock, haddock, blue whiting, ling and tusk.

 Quality grades

In Norway, there used to be five different grades of salt cod. The best grade was called superior extra. Then came (in descending order) superior, imperial, universal and popular. These appellations are no longer extensively used, although some producers still make the superior products.The best klippfisk, the superior extra, is made only from line-caught cod. The fish is always of the skrei, the cod that once a year is caught during spawning. The fish is bled while alive, before the head is cut off. It is then cleaned, filleted and salted. Fishers and connoisseurs alike place a high importance in the fact that the fish is line-caught, because if caught in a net, the fish may be dead before caught, which may result in bruising of the fillets. For the same reason it is believed to be important that the klippfisk be bled while still alive. Superior klippfisk is salted fresh, whereas the cheaper grades of klippfisk might be frozen first. Lower grades are salted by injecting a salt-water solution into the fish, while superior grades are salted with dry salt. The superior extra is dried twice, much like Parma ham. Between the two drying sessions, the fish rests and the flavour matures.

Gravlax

Gravlax or gravad lax (Swedish), gravet laks (Danish), gravlaks (Norwegian, Danish), graavilohi (Finnish), graavilohe (Estonian), graflax (Icelandic) is a Nordic dish consisting of raw salmon, cured in salt, sugar, and dill. Gravlax is usually served as an appetizer, sliced thinly and accompanied by hovmastarsas (also known as gravlaxsas), a dill and mustard sauce, either on bread of some kind, or with boiled potatoes.

During the Middle Ages, gravlax was made by fishermen, who salted the salmon and lightly fermented it by burying it in the sand above the high-tide line. The word gravlax comes from the Scandinavian word grav, which literally means "grave" or "to dig" (in Swedish, Norwegian, Danish, Dutch and Estonian), and lax (or laks), which means "salmon", thus gravlax means "buried salmon".Today fermentation is no longer used in the production process. Instead the salmon is "buried" in a dry marinade of salt, sugar, and dill, and cured for a few days. As the salmon cures, by the action of osmosis, the moisture turns the dry cure into a highly concentrated brine, which can be used in Scandinavian cooking as part of a sauce. This same method of curing can be used for any fatty fish, but salmon is the most common.

Labskaus

Labskaus (also spelled Lapskaus) is a culinary specialty from Northern Germany and in particular from the cities of Bremen, Lubeck, and Hamburg. The main ingredients are salted meat or corned beef, potatoes, and onion. Some recipes put beetroot, pickled gherkin, or even herring into it, while others have these ingredients as side orders.The word Labskaus (English lobscouse) (originally lob's course) or lapskaus, comes from Norwegian for "stew" and refers to a meat based stew commonly eaten by sailors throughout Northern Europe, which became popular in seaports such as Liverpool. The origin of this English word is uncertain  but it may be related to "loblolly", a word from an obscure Devonshire dialect where "lob" is probably an onomatopoeic description of bubbling . Another possible source for the name could be Latvian Labs kausis, meaning 'good bowl' or hotpot, or Lithuanian labas kauszas, meaning the same.  The dish became a favorite of sailors and seamen during the time of the great ships and is now commonly served in restaurants on Germany's Northern coast.The meal is traditionally prepared by boiling the beef in broth and then mincing it with the beetroot, onions, boiled potatoes and herring (some recipes use ham). Finally the base is fried in lard.Countless variations of the dish exist. For example in Bremen, just about 100 km away from Hamburg, Labskaus usually is a preparation of fried corned beef, onions and mashed potatoes with the beetroot and a Rollmops being served as a side dish.
Variations of the dish are also to be found in Scandinavia, generally without the use of herring. In Denmark the dish is similar to the Bremen version, but some times with added gravy. In Sweden, "Lapskojs" is a stew made with beef and mashed potatoes. In Norway, the word "lapskaus" more often refers to a variation of beef stew often made with gravy, or in some cases other types of stew, more or less similar to the Liverpudlian scouse. When gravy is added, this dish is sometimes also called "brun lapskaus" (brown lapskaus). Another often encountered Norwegian variety is "lys lapskaus" (light lapskaus), which is a stew made with vegetables, pork meat or pork sausages, and a bechamel sauce. A simpler "Norwegian Farmers' Stew" Lapskaus can be found with potatoes, chunks of ham, onions, salt and pepper. Yet another version is called "suppelapskaus" (soup lapskaus), where the gravy has been substituted by a light beef stock. Because of the alleged prevalence of the various dishes in that area, a part of Eighth Avenue in Brooklyn, New York, once occupied by a Norwegian immigrant community, gained the name Lapskaus Boulevard.

Guy Stuart Ritchie

Guy Stuart Ritchie (born 10 September 1968) is an English screenwriter and film maker who directed Lock, Stock and Two Smoking Barrels, Snatch, RocknRolla, Revolver and Sherlock Holmes. Ritchie directed a 20-minute short film in 1995 entitled The Hard Case. In 1998, Ritchie and his dad contacted their friend Peter Morton, of the Hard Rock Cafe chain, wondering if he had any potential investors for a debut film, Morton knew his nephew Matthew Vaughn had been studying film production in Los Angeles. Peter informed Vaughn of Ritchie's new film idea, and Vaughn knew he could help out with his own found production ideas, from his travels to America. Matthew, John, Guy and Peter all contacted their mutual acquaintance, Trudie Styler, who they all knew had enough acting money to invest in the production of Ritchie's second film. Styler informed them all that she had previously seen The Hard Case, and saw that it would be a worthwhile opportunity to co-fund the project. After about eight months, the production of the film, Lock, Stock and Two Smoking Barrels was successful, and it was released, in 1998 to a national audience, then later went global, after its well met reviews. He was introduced to Madonna, when the soundtrack for the film was issued on her Maverick Records label. The film, whose main actor was Jason Flemyng, also introduced actors Jason Statham (The Transporter), Nick Moran and Dexter Fletcher to worldwide audiences, as well as introducing former footballer Vinnie Jones to a new career as a film star. In 2000 Ritchie won an Edgar Award from the Mystery Writers of America for Best Motion Picture Screenplay. Ritchie created and produced a spin-off television series called Lock, Stock.... His second feature film was Snatch, released in the year 2000. Originally known as Diamonds, it was another caper comedy, this time backed by a major studio. The cast featured such Hollywood big names as Brad Pitt, Benicio del Toro and Dennis Farina, along with the returning Vinnie Jones and Statham. Similar to Lock, Stock and Two Smoking Barrels in featuring a complex and inventive storyline in which the characters weave in and out of each others' lives, the film also plays with time, depicting events from various perspectives. It currently has a rating of 72% on Rotten Tomatoes. Ritchie accompanied Madonna to the debuts of her film The Next Best Thing and album Music. Following his marriage to Madonna, Ritchie began focusing his filmmaking on his famous wife, directing her in both a music video (for the song "What It Feels Like for a Girl", a controversial video that showed Madonna engaging in violent behaviour, ostensibly directed at men, including T-boning a car with three men in it, tasering and robbing a man at an ATM, scratching a police car and shooting two officers with a water gun, driving her car through a group of men playing street hockey and incinerating a man by throwing a lighter into a pool of gasoline) and a short film, Star, for the BMW films series. Ritchie's next film, also featuring Madonna, was a remake of the 1974 Lina Wertmüller hit Swept Away (also entitled Swept Away). Ritchie cast Madonna as a rich, rude, socialite who, after a shipwreck, is trapped on a deserted island with a slovenly Communist sailor who humiliates her. Ritchie renamed the woman Amber Leighton after his mother. This film was both a critical and commercial disappointment. He later accompanied Madonna to the debuts of her films Die Another Day, I'm Going To Tell You A Secret, Arthur and the Invisibles, and I Am Because We Are, as well as her West End play debut in Up for Grabs. Madonna supported her husband by attending the debuts of Ritchie's films Snatch, Revolver, and RocknRolla. Ritchie's next project was a Vegas-themed heist film entitled Revolver, which was critically panned in the US and UK. It was however an underground success in Germany, where it was released very late, as a straight-to-DVD release. Another project Guy Ritchie was involved with was a hidden camera show called Swag, for Channel Five in the UK, which turned the table on criminals and opportunists by using stunts to trap them in the act. Ritchie has also written and directed RocknRolla starring Chris "Ludacris" Bridges, Gerard Butler, Tom Hardy, Jeremy Piven, Thandie Newton, and Tom Wilkinson. It scores 60% on Rotten Tomatoes and was generally received well. Ritchie intends to develop the film into a trilogy, with the next entry being "The Real RocknRolla," as is stated at the end of "RocknRolla." Ritchie will also direct a film based on a comic book series he created with Virgin Comics entitled Guy Ritchie's Gamekeeper. The film rights were acquired by Warner Brothers in July 2007. The film's being produced by Silver Pictures. In 2008, Ritchie directed a commercial for Nike called "Take It To The Next Level", about a young Dutch footballer who signs for Arsenal, showing the progression of his career from his viewpoint, until he makes his debut for the Netherlands. The commercial features cameo appearances from some football players with music by Eagles of Death Metal.[13] Ritchie's latest movie, Sherlock Holmes starring Robert Downey, Jr. and Jude Law, made its theatrical release on 25 December 2009. The film received generally positive reviews[14] and grossed more than $520 million worldwide,[15] becoming Ritchie's most successful film financially.[16] A sequel is presently being filmed.

Carol Creighton Burnett

Carol Creighton Burnett (born April 26, 1933) is an American actress, comedian, singer, dancer and writer. Burnett started her career in New York. After becoming a hit on Broadway, she made her television debut. After successful appearances on The Garry Moore Show, Carol moved to Los Angeles and began an eleven-year run on The Carol Burnett Show which was aired on CBS television from 1967 to 1978. With roots in vaudeville, The Carol Burnett Show was a variety show which combined comedy sketches, song, and dance. The comedy sketches included film parodies and character pieces. Burnett created many endearing characters during the show's television run.

Caroline Wozniacki (born 11 July 1990) is a Danish professional tennis player. She is the current World No. 1 on the WTA Tour. As of 29 August 2011, she has held this position for 46 weeks. She is the first Danish tennis player to hold the top ranking position and 20th overall. Since her WTA debut in 2005, she has improved her year-end ranking each year until finishing on top in 2010. She has won 18 WTA singles titles as of August 2011, three in 2008, three in 2009, six in 2010 (the most since Justine Henin's ten in 2007), and six in 2011. From 2008 to 2010, she was one of the original five housewives featured on the Bravo reality series The Real Housewives of New York City. In 2010, she starred in her own companion series, Bethenny Getting Married?, and again in 2011 with Bethenny Ever After. She is the creator and founder the Skinnygirl brand. In November, Frankel appeared on the ABC reality series Skating With The Stars and finished as runner-up to the champion. In April 2011, Frankel sold her Skinnygirl cocktail line to Fortune Brands' Beam Global for an estimated $120 million. It was subsequently pulled from Whole Foods Market shelves in August 2011 after it was discovered not to meet Whole Food's quality standards due to preservatives in the product, contrary to its advertisement which stated "no preservatives
