Mi Quảng
Mi Quảng (also spelled mỳ Quảng), (literally: Quảng style noodle) is a Vietnamese noodle dish that is originated from the provinces of Quang Nam and Da Nang, in the South Central Coast of Vietnam. In the region, it is one of the most popular dishes, and it is served in various occasions such as family party, death anniversary, and Tết. Mi Quảng can also be found in many restaurants around the country.In its best known form, the dish is most often made from wide rice noodles called la mi and the yellow kind of la mi is colored by the addition of turmeric. These noodles are typically made at home. The noodles are cooked and served with seasoned pork chops or chicken, half a hard-boiled egg, sauteed shrimp, peanuts, chả (a kind of beef sausage), chili pepper, fresh vegetables including: water mint (rau hung lủi), basil, Ipomoea aquatica, Vietnamese coriander, shaved banana flower (bắp chuối bao), and a kind of lettuce), and pieces of banh trang, a kind of rice cracker. These ingredients may vary, but peanut and banh trang are most commonly found in Mi Quảng and make the dish special, distinguishing the dish from other kinds of noodle.The main ingredients of the dish are noodles, meat and vegetables. Smooth white noodles are placed above a bed of vegetables in a bowl, then come meat, shrimp and finally broth which is made from the pork bone- or chicken-stewed water is added. Unlike other famous dishes such as beef noodle soup in Hue city or Pho in Ha Noi capital, the broth is poured much enough to moisten the noodles. Quang noodle is served with crushed dried peanuts, banh đa, herbs, lemons, and chilli.
